Does anyone knows any freeware or open source email server which saves all the data in an Access database so that my application will be able to collect information for the email server.

The chances of any e-mail server using Access is slim. The chances of an open-source e-mail server using a proprietary database like Access, which isn't even a proper RDBMS, is very slim.
