Converting Byte into String...

I am currently using the following code (I found on devarticles) to encrypt the users password, however this returns the information in Byte format where I require it in String format (and visa versa) as I wish to write this to the users settings file, is this able to be done? If so I am having a problem doing so, could someone please help me with this...
